Happy Saint Patrick’s Day! Whether you’re Irish or not, it’s always fun to whip up an Irish meal or go to a pub and enjoy a green beer or Guinness. Remember to wear a bit of green, so you don’t get pinched (I believe they still do that?). Either way, have a wonderful Sunday and get ready for some tasty recipes this week.
On Monday, let’s start the week with a tasty Chicken-Vegetable Quinoa Risotto. It’s made with quinoa instead of arborio rice to give a twist of graininess and lovely texture. You can load it with almost any type of vegetables you may have in your refrigerator. Tuesday’s are taco night, but it’s the first day of spring, so a Spring Green Frittata for Two sounds like much more fun, don’t you think? Wednesday night comes fast this week and nothing better than Blackened Steak and Broccolini Mushroom Bowls. A good glass of Cabernet would wash down this hardy meal beautifully. Thursday evening requires something heart-warming like my Springtime Ground Turkey Miso Ramen — it’s a pot filled with simple ingredients that make a delicious bowl of fun. On Friday night it’s a quick and easy Spring Pea and Ricotta Spread to enjoy with a good cocktail. Mealtime doesn’t need to be complicated after a busy week. Saturday’s are for baking and I love this Strawberry Rhubarb Crumb Galette this time of the year when fresh berries and rhubarb are starting to really soar with flavor. Have a tasty week!
