Spending Cinco de Mayo at home isn’t any different than most years. Yes, there were times when I absolutely had to go out and share this occasion, but I’ve learned over time, that I make pretty great tacos and margaritas right at home. The filling for tacos can vary greatly, from basic chicken varieties to meatier carnitas-style and vegetarian. Most of the time, I think we’re splitting hairs when it comes to tacos because I haven’t met a taco I didn’t really like. In fact, sometimes the easier the taco recipe, the better results.
As margaritas go, I love me a skinny, but again I probably wouldn’t pass on a good margarita, as long as it was made fresh, and full of flavor. I tend to prefer a bit more tequila, and not too much frou frou, keeping the sweetness down to a minimum. Then there is the next decision, should I salt the rim? Always in my opinion. Salt gives a margarita the perfect sweet and salty balance that every good cocktail deserves.
