Chicken Fajita Tacos – Recipe!

When people tell me they don’t have time to cook, I think to myself – they don’t want to cook.  There are so many easy meals you can make in minutes without much preparation time that taste fresh and delicious.  Sometimes when I am making a quick meal, I time myself and see if it’s as fast as I could get in my car and drive to a fast-food restaurant, go through the drive-thru and get back – usually I win.

Yes, I know cooking is my thing and many people struggle in the kitchen.  However, that’s why I’m here to provide good quality recipes, which many are fast and easy.  Today is voting day so I thought I would provide a tremendously simple recipe tonight, so you have plenty of time to head to the polls and place your vote.

Fajitas can be cooked up in minutes with a little chicken, onions and a sweet bell pepper and if you have dried spices in your pantry – perk them up with a little dusting of fun.  Corn tortillas toasted over an open flame couldn’t get much more authentic to roll this fajita filling up.

You can serve these tacos with a side of beans or rice, but I think if you’re pressed for time – skip it and enjoy them straight from the skillet.  So, no more excuses – get in the kitchen and make something quick and tasty tonight and go vote!

Ingredients

1 pound boneless skinless chicken breasts

1 teaspoon ground cumin

1 teaspoon onion powder

1 teaspoon salt

1/4 teaspoon cayenne pepper

1 white onion, sliced

1 red bell pepper, sliced

2 limes, divided

1/3 cup cilantro leaves

vegetable oil

corn tortillas

salsa, optional

To Prepare:

  1.  Slice chicken breasts thinly and set aside.  In a small bowl, combine cumin, onion powder, salt and cayenne, stir.  Sprinkle dry herb mixture over chicken, toss to coat.
  2. In a large saute pan, add 1 tablespoon oil and place over medium heat.  Add onion and stir.  Cook for 2 minutes and add bell pepper.  Continue cooking for 3 minutes.
  3. Turn heat up to medium-high and add chicken.  Cook for 4 minutes, stirring occasionally.  Squeeze juice of 1 lime over top of chicken and vegetables, stir.
  4. Toast tortillas over open flame or under broiler.  Top tortillas with fajita filling and a sprinkling of cilantro.  Serve with a lime wedge and salsa.  Enjoy!
