Okay, it’s finally here Cinco de Mayo and your guests are coming soon and you are ready to celebrate! Pull out that blender and a fresh pineapple and Wow them with a fresh Pineapple Margaritas! The delicate flavors of pineapple are perfect to wash down a chip or two of my Whipped Queso Dip or Tropical Guacamole. I can’t emphasize enough how wonderful fresh pineapple tastes and it only takes seconds to cut-up or buy it already diced in the grocery store, but skip the canned stuff.
These Pineapple Margaritas will become a staple for upcoming summer parties, holiday get-togethers and definitely Mexican Fiestas. Salud or Arriba, abajo, al centro y adentro!
Ingredients
4 cups crushed ice
3 cups fresh pineapple chunks
1/3 cup silver tequila
1/4 cup unsweetened almond milk
2 tablespoons Cointreau
2 tablespoons maple syrup
mint, optional
(Makes 4 Margaritas)
To Prepare:
1. Remove the top, bottom and sides of the pineapple. Then, cut the sides off around the core and dice into chunks.
2. Add the ice, pineapple and tequila to the blender. Then, add the almond milk, Cointreau and maple syrup. Puree until smooth, about 2 minutes. Add more ice if you prefer your margaritas a little more frozen.
3. Pour into glasses and serve with a chunk of pineapple and a sprig of mint. Enjoy!
