A Week At A Time – Meal Ideas!

Happy Super Bowl Sunday!  I hope many of you are gathering to watch the big game, and even if you’re not a football fan, maybe you are just excited to see Rhianna perform at halftime.  I know I am and with that comes fun foods to enjoy that are easy to make, and lean towards comfort; like a platter of nachos, a decadent burger, or some tacos — my favorite.

Come Monday, we are headed to a full week of meals that begin with a delightful Asparagus Leek Soup.  This hardy soup is both healthful and tasty, and one big bowl is a real meal.  Tuesday is Valentine’s Day, so make something special like this Pecan Praline Heart-Shaped Brownie.  It’s fudgy and nutty and super fun to share.  Wednesday is all about making my Quick Turkey Meatball Pasta with Tomatoes and Spinach.  It’s a simple recipe that is loaded with good for you ingredients.  Thursday is salad night and this Cucumber, Couscous and Goat Cheese Salad will not disappoint.  Friday is a good night to throw together these Thai Shrimp Lettuce Cups after work and really unwind with family or friends.  Saturday’s are for baking (even though we baked Tuesday, or maybe you didn’t get around to it), and these Crunchy Dark Chocolate Raspberry Bars are spectacular.  Have a tasty week.
