A Week At A Time – Meal Ideas!

Many people are heading home today after a big Thanksgiving weekend and getting ready for cyber Monday tomorrow.  However, there are some that still have a refrigerator full of leftovers and need some inspiration to create something delicious a third or fourth time around.  I say get creative with your leftovers and make something you may not of tried in the past.  Perhaps my Turkey Enchilada Skillet for a simple take on enchiladas might be up your alley.  You can always substitute diced or shredded turkey for ground turkey in most recipes.  You might be in the mood for brunch today, after the dust settles in the driveway as the last guests leave and this Potato, Sausage and Brussels Sprout Hash and Eggs would provide the right kind of energy you’ll need to begin the clean-up that’s required in your house.  Maybe it’s a good ole’ pizza pie you’re craving and my Turkey, Potato and Cranberry Pizza will surely help reduce that stock of cooked food in the refrigerator.

By Monday it is time to start fresh and begin thinking about the next holiday.  Christmas is a few weeks away, but it’s coming quickly, so I recommend making life easy on yourself, while you begin your shopping and decorating regimen.  Monday is a good day to de-carb our diets and make my Herby Butter Steak and Mushroom Skillet.  It’s quick, delicious and it only has a few ingredients.  Tuesday is a nice night for my Albondigas Soup because it fills up those Mexican food cravings without loading you down.  On Hump Day we’re making my Crispy Chicken with Arugula, Parmesan and Balsamic because it’s tasty as could be, done in just a few minutes, and on the healthier side of things.  Thursday is stew night and this Sweet Potato, Lentil and Andouille Sausage Curry Stew will keep you warm and toasty and probably provide some lunch leftovers the following day.  Friday night’s are a time to unwind and make something deliciously easy, yet comforting, and this Chicken and Spinach Skillet Pot Pie is easy to make using mostly store-bought ingredients, like puff-pastry, rotisserie chicken and baby spinach.  Saturday’s are for baking and I just love these Pear and Cardamom Muffins for breakfast or brunch.  Have a great week and stay warm.
