A Week At A Time – Meal Ideas!

Happy Sunday to everyone.  I hope you had a nice post-4th of July week.  I’m back in Los Angeles and looking forward to a week with my grandson who is going to volleyball camp on the beach each day, then fun in the afternoon with me and my husband.  The Hollywood Bowl is celebrating their 100th anniversary, and West Side Story starts on Tuesday, plus there are so many concerts this summer – maybe something you might want to check out?  If you’re looking for a great food experience today, go to Smorgasburg in downtown Los Angeles where a large audience of food vendors sell all kinds of amazing things, that you can enjoy from 10 a.m. until 4:00 p.m.

As for the menu this week, I thought we’d start Monday off with my tasty Poached Chicken Salad with Strawberries & Honey Poppy Seed Vinaigrette.  It’s light and refreshing and can be enjoyed for lunch or dinner.  Tuesday’s are for tacos, so it’s time to make a big pot of my Slow-Cooker Chicken Filling to use in any type of tortilla or Mexican dish.  Hump Day deserves a cooking break and Summer Ceviche is the answer for a refreshing meal.  On Thursday I thought another slow-cooker meal would be a nice treat and my Kalua Pork recipe is super scrumptious and gives you an island vibe.  TGIF and it’s time for another great cocktail —  Blueberry Paloma anyone?  Saturday’s are usually for baking, but I thought maybe a delicious Peach & Honey Bagel for breakfast or brunch would be a better option in the heat.  Have another terrific and tasty week.

Monday –  Simple poached chicken served with greens and strawberries and tossed with a honey poppy seed dressing.

Tuesday – Mexican spiced chicken meat can be rolled into burritos, tacos or enchiladas.

Wednesday – Diced fresh fish, mango (or pineapple), and avocado make the best no-cook ceviche meal.

Thursday – Low and slow is the answer to super tender pork with Hawaiian flavors.

Saturday – Fresh peaches with a drizzle of honey served on top of a toasted bagel with a big smear of cream cheese, or goat cheese.
