Summertime is all about fresh fruit, especially stone-fruit like peaches, plums and apricots. So, why not squeeze as many of these naturally sweet jewels into mealtime over the next couple of months and change up our ordinary regime of recipes? Make something traditional taste exceptional with just a piece of fruit.
Breakfast is a good place to start with fresh fruit because it’s an easy no-cook way to get some extra vitamins and minerals, while adding tons of fresh flavor to almost anything. Cereal and oats seem blase’ this time of year, especially in the heat – so start with toast, English muffins or chewy bagels and build from there.
Cream Cheese or Ricotta Cheese is an easy option on top of a toasted bagel, but adding sliced yellow peaches and a drizzle of good honey with a sprinkling of thyme leaves changes the game completely. The flavors are sweet, tangy and herbaceous to boost – I think it’ll be a morning game changer. Happy summer.
4 bagels, any variety
8 ounces cream cheese, or ricotta cheese
4 small ripe peaches
4 teaspoons honey
2 sprigs fresh thyme
- Toast bagels to your liking. Spread with cream cheese and set aside.
- Slice peaches and place as many as will fit on top of cream cheese.
- Drizzle with honey and sprinkle with thyme leaves. Enjoy!
