It’s been a busy week, especially here in my household. My granddaughter’s birthday party was a smash and she couldn’t of been more adorable, and the birthday cake turned out very cute. I learned how to make an ombre’ cake, and no, I won’t be taking orders in my near future. Now it’s time to get back to summer. My sister is in town and we’re headed to Santa Ynez for a few days to enjoy the valley, and all it has to offer. Riding our e-bikes through the rolling hills will definitely be on the agenda, followed by some sipping of wine, and dinner at a few of my favorite restaurants, like SY Kitchen and Leonardo’s. I will be going to my local farmer’s hut to buy some fresh produce to cook-up some summer fresh fare as well. It’s the honor system up there, nobody needs to man the fort, you just weigh and pay. My kind of place.
This week’s meals are seasonal fun to the maximum. Starting with a summer salad with strawberries and chicken that can’t be missed, and one of my all-time favorite salmon recipes. Summer corn is on my mind because it’s so luscious and naturally sweet, so I added a favorite casserole to the mix of recipes this week. A big grilled steak to enjoy family-style that’s studded with juicy gingery tomatoes is on the menu too, and by the end of the week, it’s pasta night. Saturday’s are always great for baking, at least in the morning when it’s still cool outside. Have a great week ahead, and don’t forget to enjoy the outdoors.
Monday – Poaching chicken only takes minutes on the stove top and pairing it with fresh strawberries, mixed greens and a honey poppy seed dressing makes it a fresh and flavorful meal.

Tuesday – This is one of my all-time favorite salmon dishes because it’s wrapped in bacon. The summer peach salsa also adds so much flavorful and a bit of heat. It’s the perfect warm weather meal.

Wednesday – A casserole of summer corn is a great side dish, especially served with a crisp green salad, or some grilled protein. Either way, it’s a delightful meal.

Thursday – This sweet and savory grilled rib-eye makes a terrific meal, and the gingery tomatoes just add the right note of sweet tang to the plate.

Friday – It’s pasta night, but made in the Instant Pot. This creamy eggplant-tomato based dish will surely satisfy those Italian lovers in your household.

Saturday – It’s time to bake, at least in the morning. The juicy blackberries of the season shouldn’t be overlooked and when you bake them together with a brown butter custard…oh boy!
