It’s been a busy week and I can’t believe it’s already Sunday. The weather has been gorgeous here and we’re headed for another set of rains come Thursday. I’m going to get out today and enjoy as much sunshine as possible and work on my upright covered garden boxes. I love this time of the year when it’s cool and crisp with blue skies and everything is beginning to turn green, and soup on the stove sounds like the best meal in town.
Monday’s meal will begin Sheet Pan Brussels Sprouts with Lemon Ricotta — a wholesome vegetarian meal that’s packed citrusy flavors. It’s also nice served with a piece of roasted chicken or fish. Tuesday night means tacos and my Turkey Tacos Dorados are crispy crunchy and so tasty for during the week. Wednesday is fish night and my Buttery Cracker Crusted Halibut is a cinch to throw together and so delicious. Even the non-seafood lovers in the house will enjoy this one. Thursday night is Lasagna Soup time which hits the spot on so many levels. It’s a pasta and a soup all tied into one — super satisfying. Hot Honey Garlic Chicken Wings and Broccoli are the perfect meal to end a busy work week and pretty nice for Sunday’s game day. Saturday’s are for baking and my 3-Ingredients Flourless Chocolate Heart Cake is simplicity at it’s best. Have a tasty week.
