Happy January and whether you’re making it a dry one or not, I hope that it’s filled with delicious recipes that really warm your heart. Many folks have made resolutions that may or may not have been broken by now, but I hope that one thing is for sure — you’re all cooking a bit more.
This week starts with cozy food that’s both healthy and delicious and on Monday, it’s Chicken Sausage, Cabbage and Pasta Soup. One bowl really fills you up with good-for-you ingredients and the leftovers are truly delightful for lunch. Tuesday means tacos, yet something on the lighter side like Sheet Pan Loaded Cauliflower Nachos really sound good. The cauliflower adds to the texture and flavor, and brings a bit of fun to the pan. Salt and Pepper Salmon with Lemony Asparagus makes hump day super tasty, while keeping things healthier. On Thursday it’s my Thai Ground Pork and Green Beans, a low carb wonder that’s packed with Asian flavors. TGIF and whether you’re drinking or not — my Goat Cheese Broccoli Rice Skillet will hit the spot after a long week. Saturday’s are for baking and these Gluten-Free Raspberry Crunch Bars are fruity, oaty and super fun to have for dessert or to pack into lunches during the week. Happy New Year.
