I had a nice long weekend with my dad, he turned 79 this past week. We got to spend some quality time together golfing, playing Pickleball, eating and drinking some tasty wine together — all mixed with lots of laughs and stories about the past. Life goes by so quickly and I think the older I get, the faster it feels like time is a ticking. I put my dad in yesterday’s video (just briefly), so if you missed it — check it out.
This week is full of tasty treats as summer rolls along so quickly. Monday is a great night for this Sauteed Shrimp and Zucchini Quinoa Salad with Dilly Vinaigrette. It’s light, yet filling enough for a full meal. Tuesday means tacos and these Instant Pot Tri-Tip Tacos are a great meal, especially if you have leftover beef from another meal and need to use it up wisely. Wednesday is hump day, and these Ranchero Beans are so tasty and go with any grilled foods. Thursday night is a great time for Skillet Orange Chicken Thighs and Broccoli. It’s super easy to prepare and tastes so much fresher than take-out. TGIF and these Tomato Tartlets are perfect with cocktails or wine after a long week. Saturday’s are for baking and I just love my Instant Pot Raspberry Cheesecake during the summer months because I don’t heat up the kitchen. Cheers!
