A Week At A Time – Meal Ideas!

I just got back from a wonderful week in Grand Cayman with my very good friends.  Their parents have lived there since the late eighties and the island was beautiful with turquoise waters and white sand beaches – I couldn’t get enough.  I had some delicious seafood — Snapper and  fresh Mahi Mahi served blackened, jerk=style and in ceviche.  It was the Jerk Chicken that we discovered from a local vendor that really tasted island fresh, served with sauces made from the Scotch Bonnet Chili (an ingredient that’s difficult to find in California).  The grilled chicken flavors reminded me of Jamaica and it had a summertime vibe that I miss this time of year.

This week is still a bit rainy, and even though I’m ready for summertime food — I’m staying with the warm dishes that make us get through the chillier weather.  On Monday it’s my 10-Minute Instant Pot Mushroom and Spinach Risotto.  A dish that’s super quick, yet has flavors like you stood and stirred it over the stove for 35 minutes.  Tuesday night is a big iron skillet of Roasted Brussels Sprouts in Chili Lime Sauce.  The flavors have a Thai-like vibe that pair nicely with Asian inspired roasted fish or chicken.  Wednesday is soup night because it’s suppose to rain and a big bowl of my Chicken Sausage, Cabbage and Pasta Soup will surely hit the spot.  Thursday evening — Glazed Pomegranate-Orange Salmon – a dish I always crave after a relaxing vacation.  Friday night is the perfect good time for my Spoon Bread Bites with Sirarcha Yogurt because they’re tasty with a delicious cocktail.  Saturday’s are for baking and my Plantain Miso Bread has an island vibe that will make you feel so good inside.  Have a delicious week ahead.
