Happy Sunday and another gorgeous week it was. I can’t stress enough to get outside and see the flowers and beautiful rolling hills. The vegetables right now are so sweet and lovely — something we should all be cooking with in the upcoming weeks.
Monday is a good night for my Yogurt Honey Tahini Cucumber and Strawberry Salad. It’s light, but satisfying as a meal or great with some protein added; like rotisserie chicken or shrimp. Tuesday night is taco time, yet I think this week let’s go with my Chicken in Creamy Chipotle Sauce — you talk about good. Wednesday is a great evening for a fan-favorite — Lemony Ricotta Bow-Tie Pasta. It’s quick, delicious and you’ll love the delicate citrus notes. Thursday night and it’s almost the weekend, and I feel like a little traveling — so let’s make my Moroccan Meatballs and pretend we’re actually there. Friday night and it’s appetizer time – Tangy Roasted Mushrooms — are great with a glass of Pinot Noir or a cocktail. Saturday’s are for baking and these Flourless Almond Butter Chocolate Chip Cookies are one of my favorite recipes. Have a wonderful week.
