Summer salads are something I truly live for during the warm months of the year. The light and bright produce that’s so prevalent right now, shouldn’t be overlooked. Water-packed cucumber are a great way to stay hydrated, not to mention are loaded with fiber and spa-like taste. The combination of cucumbers and strawberries makes a sweet and aromatic salad that when tossed in a creamy yogurt honey tahini dressing — pops with even more flavor.
This salad recipe is a quick one for sure, and after a little slicing, the entire thing is done within minutes. The dressing is quite thick, but you want it that way because both cucumbers and strawberries have big water content, which releases slightly after they are combined. Another great note is that this salad lasts in the refrigerator for a few days, so if you want to make it ahead, or you have leftovers — you can enjoy them tomorrow.
Ingredients
1 pint fresh strawberries, hulled and sliced
4 small Persian cucumbers, sliced
1 cup low-fat Greek yogurt
1/2 cup tahini paste
2 teaspoons honey
1/4 teaspoon salt
3 sprigs fresh basil, leaves removed and sliced
2 teaspoons sesame seeds
(Serves 4)
To Prepare:
- In a large bowl, add yogurt, tahini, honey and salt, whisk until smooth.
- Add sliced strawberries and cucumbers to dressing and toss until coated.
- Add basil and toss again. Place salad in serving bowl and sprinkle with sesame seeds. Enjoy!
