Sheet Pan Miso Glazed Salmon with Broccoli – Recipe!

Miso glazed fish is offered in many Japanese restaurants and Cod is usually the fish that this Tahini based glazed is spread upon.  Miso with it’s slightly salty, yet earthy taste lifts milder tasting seafood to another level however, Salmon – the king of seafood, as I like to refer to it – can be substituted in it’s place for one magnificent meal.

The discovery of dark soy sauce is my new found love.  I read many blogs, especially those from people who create food that I need to learn more about.  Chinese food is one of those cuisines I think most of us could use some education because the ingredients do make a difference, more traditional pantry items or tools of a Chinese cook’s kitchen.  You can find dark soy sauce online on Amazon.com and it’s truly worth the splurge.

Dark Soy Sauce is less salty than regular soy sauce and it is filled with a deeper unami taste, something I quite enjoy.  Just a splash added to my Miso Glaze and you have yourself a truly authentic tasting experience.  If you’re worried about this bottle spending too much time in your pantry, don’t – I have a few other recipes coming up containing this special stuff.  By the way, this entire meal is done within 10 minutes!

Ingredients

10 ounces fresh salmon filet

2 cups broccoli florets, washed

vegetable oil

salt & pepper

1/2 lemon

Miso Glaze

1/3 cup tahini

1/4 cup dark soy sauce or regular

2 tablespoons brown sugar

2 teaspoons rice wine vinegar

1/4 cup hot water

(Serves 2)

To Prepare:

  1. Preheat oven to broil.  Cover sheet pan with foil.  Drizzle with vegetable oil to coat.  Place broccoli and salmon on sheet pan and sprinkle with salt and pepper.  Drizzle fish and broccoli with oil.
  2. Place sheet pan under broiler for 5 minutes.  While fish is cooking, in a small saucepan, add all Miso Glaze ingredients and place over low heat.  Whisk until lightly bubbling and turn to simmer.
  3. After 5 minutes, remove sheet pan and spoon glaze over fish.  You can use remaining glaze for dipping, or save for another meal.  Place sheet pan back under broiler for 3-5 minutes, or until fish is done to your liking.  Squeeze lemon over broccoli and serve immediately, Enjoy!
