Sheet Pan Miso Glazed Salmon with Broccoli – Recipe!

Miso glazed fish is a popular dish seen in many Japanese restaurants and it’s usually prepared with cod, a hardy white fish found in both east and west coast waters.  Miso paste has slightly salty, yet earthy notes that tend to sweetened, when spread as a glaze on salmon, and broiled quickly.  As you know, salmon is a favorite of mine and I love almost any meal that includes it, especially Sheet Pan Miso Glazed Salmon with Broccoli — a tasty meal in minutes.

Dark soy sauce has become my favorite condiment.  I read many recipes both on the internet and in my cookbooks, especially from those who create food that inspires me, and many Asian food chefs and writers enjoy preparing their dishes with darker soy sauce.  You can find dark soy sauce online on Amazon.com, or in a good Chinese market, and it’s truly worth it.  Dark Soy Sauce is less salty than regular soy sauce and it is filled with a deeper umami taste, something I quite enjoy.  I added just a splash to my miso glaze, which gave it that richer color.

This meal is made quickly in just under 10 minutes and couldn’t be more enjoyable.  I prefer to serve it over hot rice, in smaller bowls, but there’s nothing wrong with enjoying it straight from the sheet pan, and spooning it directly onto plates.  Fresh lemons wedges are a nice touch squeezed over the top of both the salmon and broccoli.  You can always double the recipe for larger families or gatherings.

Ingredients

10 ounces fresh salmon filet

2 cups broccoli florets, washed

vegetable oil

salt & pepper

1/2 lemon

Miso Glaze

1/3 cup yellow or white miso

1/4 cup dark soy sauce or regular

2 tablespoons brown sugar

2 teaspoons rice wine vinegar

1/4 cup hot water

(Serves 2)

To Prepare:

  1. Preheat oven to broil.  Cover sheet pan with foil.  Drizzle with vegetable oil to coat.  Place broccoli and salmon on sheet pan and sprinkle with salt and pepper.  Drizzle fish and broccoli with oil.
  2. Place sheet pan under broiler for 5 minutes.  While fish is cooking, in a small saucepan, add all Miso Glaze ingredients and place over low heat.  Whisk until lightly bubbling and turn to simmer.
  3. After 5 minutes, remove sheet pan and spoon glaze over fish.  You can use remaining glaze for dipping, or save for another meal.  Place sheet pan back under broiler for 3-5 minutes, or until fish is done to your liking.  Squeeze lemon over broccoli and serve immediately, Enjoy!
