Lemony Avocado Butter Bean Dip is super creamy, naturally buttery with citrus notes and is outstanding on top of a crunchy tortilla chip.
I love a simple dip recipe that’s made in a food processor and ready in a few of minutes. A couple of avocados, a can of drained butter beans and a lemon and you are on your way to dip-dom. Butter beans are an underutilized bean in my opinion and offer a thick texture to a dip without adding fat. It’s a bean that’s super creamy and will puree smooth with ripe avocados and a splash of lemon juice.
I like to pile the dip in a bowl and serve it with crispy chips that are lightly salted to contrast that delicate lemon flavor. This dip would also make a great vegetarian spread on a sandwich or piece of rustic toast for breakfast.
Ingredients
2 medium avocados, cut in half and seed removed
14 ounce can butter beans, drained
zest and juice of 1 lemon
1 teaspoon smoked paprika
1 teaspoon salt
1/4 teaspoon black pepper
1/3 cup cold water
(Makes about 1 1/2 Cups)
To Prepare:
- In a food processor, add avocado pulp, butter beans, zest and juice. Add paprika, salt and pepper, puree for 2 minutes.
- Add water and continue to puree for 1 minute. Add more water if necessary.
- Serve with tortilla chips. Enjoy!
