Meat and potatoes are a staple in many households and when the weather is chilly outside — it’s something most of us crave. Meatloaf just happens to be something I have experience making over and over again because when I had my own private chef business, it was my turkey meatloaf that my clients enjoyed so very much. What people really want to eat are well prepared traditional dishes with a slight twist, like my Sheet Pan Meatloaf and Potatoes with Tomato Hot Honey Sauce.
My sheet pan meatloaf is a mix of ground beef and pork and a bunch of tasty seasonings. I chose two kinds of meat for two reasons. First, the pork keeps things tender after cooking, and yields a little fat that helps roast the potatoes so nicely, and secondly, beef brings structure to a meatloaf, and provides a hardy flavor that we all are expecting in this recipe.
Making a meatloaf and potatoes that finish at the same time is my kind of meal. I start the meatloaf first, and then add the potatoes after 30 minutes, so they don’t overcook and turn out soft and tender with crispy skins. The sauce is a mixture of three things; tomato sauce, honey and red pepper flakes. It yields enough to spread over the meatloaf, while still having some to use as a dipping sauce for the potatoes. The leftovers make some killer meatloaf sandwiches for days to come — so make sure you don’t miss out on that.
Ingredients
1 pound ground beef
1 pound ground pork
1 cup panko breadcrumbs
1 cup white onion, diced finely
2 eggs
1/2 cup grated parmesan cheese
2 teaspoons onion powder
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon black pepper
Tomato Hot Honey Sauce
14 ounce can tomato sauce
1/4 cup honey
1 1/2 teaspoons red pepper flakes
1 pound small new potatoes, washed
salt & pepper
oil for cooking
(Serves 6)
To Prepare:
- Preheat oven to 375 degrees. In a bowl, combine all meatloaf ingredients. Press together gently to form a large oval, about 4-inches thick. Drizzle sheet pan with oil and place meatloaf on top. Bake for 30 minutes. Remove sheet pan from oven and add potatoes – toss around in pork fat. Reduce heat to 350 degrees.
- Bake in oven for 30 minutes. While meatloaf and potatoes are cooking, add tomato sauce, honey and red pepper flakes to a sauce pan. Place over simmer and cook until meatloaf in done.
- Remove meatloaf and potatoes, and using a spoon cover meatloaf with sauce. Place back in oven for 10 minutes with potatoes. Reserve remaining sauce for dipping. Remove meatloaf and potatoes from oven.
- Place on a serving platter and serve with extra sauce. Enjoy!
