Meatloaf just happens to be something I have experience making over and over again because when I had my own private chef business, it was my turkey meatloaf that my clients enjoyed so very much. My Sheet Pan Meatloaf and Potatoes with Tomato Hot Honey Sauce has many similar components, yet a big kick from the slightly spicy sauce.
This meatloaf is a mix of ground beef and pork and a bunch of tasty seasonings. I chose two kinds of meat for a couple of reasons — first, the pork is rich and delicious and offers a tender texture, while rendering a little fat that helps roast the potatoes beautifully and secondly, beef brings structure to a meatloaf and provides a hardy flavor that we all are expecting.
Making a meatloaf and potatoes that finish at the same time is my kind of meal. I roast the meatloaf on a sheet pan first, and then add the potatoes after 30 minutes, which lends the potatoes to a soft interior with crispy skin. The sauce is a mixture of three things; tomato sauce, honey and red pepper flakes. It yields enough to spread over the meatloaf, while still having some to use as a dipping sauce for the potatoes. The leftovers make some killer meatloaf sandwiches for days to come.
