It’s beautiful out since all the rain and after a little bit of clean up, I must say, it’s pretty gorgeous and green here. It’s Super Bowl Sunday and whether you’re rooting for the 49ers or the Chiefs, it’s going to be a great game. I can already smell football food in the air — wings, burgers, dogs and lots of dip — warm or cold — pretty much anything you can jam a chip into qualifies.
After the big game it’s back to the grind and on Monday, I’ll try to keep that party spirit going with my Chicken and Basil Baked Rigatoni. It’s an easy prep and super comfort food that will please almost any palate in your house. Tuesday is taco night and I’m craving my Grill Pan Swordfish Tacos. It doesn’t matter where you live, you can still grill indoors and make these delicious fish tacos. On Wednesday, it’s Valentine’s Day and my Pecan Praline Heart-Shaped Brownie will make anyone fall in love with you — trust me. Thursday night is all about my Sheet Pan Cajun Pork Tenderloin with Sweet Potato Wedges and Crispy Chickpeas — an easy meal that has flavors of New Orleans. TGIF — I’ll keep it simple with Instant Pot Chicken Lettuce Wraps. These wraps are super easy with not many ingredients and on the healthier side — keepin things light. Saturday’s are for baking and let’s go savory with my Bacon and Leek Quiche Tart — it’s an old recipe, but still a goodie (as my dad always says). Have a wonderful week.
