One Pan Broiler Chinese Shrimp and Broccoli – Recipe!

After a busy weekend, the first thing I want for dinner is something quick and delicious that’s on the healthier side; like my One Pan Broiler Chinese Shrimp and Broccoli.

A good Chinese style meal is usually about the sauce and this recipe is no different.  The sauce is made with mostly pantry ingredients, things many of us already have on hand and can whisk together quickly in a measuring cup.  The protein in this dish are large shrimp that I tossed with broccoli florets and shredded carrots.  When combined, it’s broiled in a hot oven until the shrimp are sweet and pink the vegetables crisp-tender.

I like to squeeze of fresh lime juice over top and sprinkle with chopped cilantro.  A big scoop of hot rice pairs nicely with this recipe and creates one delicious meal in minutes.

Ingredients

1/3 cup dry sherry

1 teaspoon chili sauce, mild to medium heat

2 teaspoons cornstarch

2 teaspoons grated ginger

1 clove garlic, minced

1 teaspoon granulated sugar or honey

1 tablespoon soy sauce

1/4 cup hoisin sauce

1 pound large raw shrimp

2 cups broccoli florets

1 cup shredded carrots

juice of 1 lime

1/4 cup cilantro, roughly chopped

oil for cooking

hot rice, optional

To Prepare:

  1. Preheat oven to broil.
  2. In a large measuring cup, combine sherry, chili sauce, cornstarch, ginger, garlic, sugar, soy sauce and hoisin sauce.  Whisk until combined.
  3. In a large oven safe dish, add shrimp, broccoli florets and shredded carrots with 2 tablespoon neutral oil.  toss to combine.
  4. Pour 2/3 of sauce over top of shrimp mixture and broil or 8 minutes.  Remove and stir.  Add remaining sauce and broil again for 5-7 minutes until shrimp are pink and vegetables are crisp tender.
  5. Remove from oven and squeeze with lime juice.  Sprinkle with cilantro.  Serve with hot rice, if desired.  Enjoy!
