Salads are a big part of my everyday eating and this Tahini Green Goddess Dressing just made them that much better.
Many of us have prepared a green goddess dressing with fresh herbs, garlic, and something creamy; like mayonnaise or yogurt, however this version with tahini paste makes this green goddess recipe so much tastier. Tahini is a sesame paste that’s readily available at most grocers, and is made of sesame seeds that have been pulverized into a thick butter. The thick and seedy consistency gives this dressing body and a nutty sort of flavor that pairs beautifully with fresh herbs.
I used both apple cider vinegar and lemon juice for acidity, which brightens the entire dressing making it one delicious dip or dressing. I like to spoon it over arugula, but it would be beautiful as a dipping sauce with a steamed artichoke, roasted potatoes or even potato chips.
Ingredients
2 cloves garlic, peeled
1/2 cup tahini paste
1 teaspoon kosher salt
4 teaspoons soy sauce or tamari
2 tablespoons apple cider vinegar
2 teaspoons honey
1/2 cup water
1 cup fresh parsley
1 cup fresh cilantro
1/2 lemon
(Makes about 1 Cup)
To Prepare:
- In a food processor, add garlic cloves and pulse until coarse.
- Add tahini paste, salt, soy sauce, apple cider vinegar, honey and water. Pulverize until smooth, about 1 minute.
- Add parsley, cilantro and juice of 1/2 lemon. Pulverize for 2 minutes, until smooth and creamy.
- Spoon into a jar and store in refrigerator. Enjoy!
