Happy Sunday – we lost an hour’s sleep, but gained another hour of daylight tonight. Not a bad trade in my opinion. It was another rainy week for Southern California and more to come on Tuesday, but I’m not complaining. I embrace the rain because there are so many years when we barely get a drop. The lakes and rivers are full and I am really looking forward to springtime when the flowers are in bloom. We have a couple weeks until spring is official, yet my brain is already shifting gears and craving different foods. Salads replace soup, and lots of green vegetables take shape on our tables. I can’t wait.
This week’s meals begin with Monday and my Mason Jar Lunch Salads – so you stay happy and satisfied through the workday. You make them all at once and store them in the refrigerator to enjoy all week long. Tuesday means tacos, yet I mentioned we were going to phase in some salads this week and my Mexican Steak Salad for 2 is delightful and hardy enough to satisfy those cravings. Wednesday needs some fish or make it on Friday during Lent, and my Brown Butter Trout with Lemon and Capers is one of my favorites. It has a light and crispy exterior with soft and creamy flesh in a citrusy sauce. Thursday means meatballs and not just any meatballs, but my Pork Meatballs with Quick Marinara. They are easy to put together and taste like they took hours to make. TGIF and it’s time for French 75 Cocktail because it’s almost Oscar night. Saturday’s are for baking and I love a good cupcake – these Lemon Meringue Pie Cupcakes are the bomb and it’s citrus season. They would make a great treat for an Oscar party. Enjoy!
