It’s another rainy week in Southern California, yet I’m in Hawaii soaking up some sun for my birthday weekend. I love Oahu and Waikiki –it’s a people watching town with some pretty great restaurants. Did I mention the fresh fish — it’s to die for. Nothing like freshly caught Hawaiian seafood of any kind, and the preparations are so fun, from tropical macadamia crusted options to more Asian-style poached fish with crunchy vegetables – I’ve enjoyed them all.
When I return early this week it’s back to cooking and preparing some of my favorites starting with Monday and my Halibut Fish Sandwiches. These simple sandos are delicately fresh and flavorful and are reminiscent of my Hawaiian travels. Tuesday night it’s time for some Grilled Chicken Tostadas made on the grill outdoors, or on the stove top in a grill pan. Hump Day needs a big Blueberry, Radish and Spinach Salad with Creamy Vinaigrette because who doesn’t love a flavorful bowl of fresh greens?! Last Thursday was my birthday and I love cake, so I want to continue the party and eat more cake with this Lemon Elderflower Cake with Lemon Curd Cream. It’s just like the cake that Meagan and Harry had at their wedding – yum. TGIF and you need something tropical to drink – Grilled Pineapple Mojito! When in Rome or Hawaii, I say. Saturday’s are for baking, so a brunch dish that’s loaded with creamy caramel flavors sounds pretty amazing – French Toast Cream Cheese Casserole. Not a bad idea, huh? Have a tasty week and say, “Hi” to March.
