Happy Sunday and president’s day weekend. Hopefully many of you are out and about enjoying the post-covid life by now. So, many people are on the highway, it’s back – traffic. Yes, that’s what Southern California is all about — hurry up and wait, but it’s worth it because we are having some amazing sunny days after the rain, and boy is it gorgeous. I’m beginning to think about springtime.
The meals this week are still cold weather foods, but maybe with a few sunshine recipes throw in for fun. On Monday, it’s my Green Minestrone with Spring Onion & Parsley Pesto — it tastes a bit like spring. It’s super flavorful with greens ingredients. Tuesday night is taco night, however I’m going with my Ranchero Beans because they are so good and you can make them anywhere – the stove top, on the grill or in an Instant Pot. Wednesday is a great night for store-bought pasta made into a delicious dish — my Cheese Ravioli with Shrimp in Pink Sauce is bursting with flavor and super easy to make. On Thursday night it’s time for my Quinoa Salmon Burgers with Creamy Horseradish Spread either served high on a bun or over mixed greens – either way, they are terrific. Friday night and it’s cocktail time, and this Pomegranate Orange Gin & Tonic will set the evening mood. Saturday’s are for baking and I’m thinking more chocolate is needed, so my Chocolate Peanut Butter Brownie Bites are an easy treat. Cheers to the week ahead.
