This week went by so fast and today we are expecting another storm to pass through. It doesn’t look like the other storms from previous weeks, but it’s incredible that we are still getting rain. With the cooler weather there’s always time for a big pot of soup, which I recommend making today, so you have something to enjoy for lunches, or at dinnertime when time is tight. Here’s a list of some of my most recent favorite soups.
I’m kicking off the week with Buffalo Chicken and Cauliflower Penne because it’s satisfying and hardy with incredible zesty flavors. Tuesday is taco night and yes, we’re back to making tacos again, and these Slow-Cooker Carnitas Street Tacos are easy to prepare before you start work for the day, so the tacos are mostly ready at dinnertime. Wednesday night is a great evening for White Bean, Italian Sausage and Wilted Arugula Soup. It’s super tasty and it’s made with simple ingredients you may already have on hand, or can pick-up quickly at your local grocers. Thursday is salad night and this Farro, Tangerine and Leafy Green Salad with Tahini Vinaigrette is a meal in itself because of the hardy ancient grains and simple dressing. Friday night probably requires a cocktail and this Maple Bourbon Smash is citrusy and refreshing, and still warms your bones on a cold evening. Saturday’s are for baking and this time around, since it’s February — I thought we’d bake these Gluten-Free Sweetheart Oatmeal Rum Raisin Cookies. Have a tasty week.
