Well, we made it through the first week of January and wow, it has been exciting on the rain front. We got 2 1/2 inches of much needed rain just in one day with scattered rain the entire week and more is expected tonight (I’m beginning to sound like the weather person). I miss the rain because most years, we hardly get any in Southern California — so I’m embracing it. I love the food that goes with the rain, especially warm and comforting soups and stews that make you feel so good inside. This week I’ll highlight some of my favorite comforting recipes — foods you’ll love to eat during the rain.
On Monday, it’s my Coconut-Curry Chickpea Soup to soothe your soul. I remember making this at my mom’s house a few years back, while she was recovering from surgery. It sure was good. For Tuesday, it’s my Pork & Potato Enchiladas Verdes – how long did you think I could go without Mexican food?? On Hump Day this Grainy Spinach Salad makes a meal in itself because it’s prepared with Farro, an ancient grain with a nutty chewy texture that’s so satisfying. Thursday night is a good time for my Honey Chili Chicken. It’s sweet and mildly spicy, and brings personality to the table — my kind of meal. Friday night is a good time for a skillet of my Marsala Mushrooms that you can spoon over toasted rustic bread, polenta or rice. Saturday’s are for baking, and these Paleo Raspberry-Coconut Muffins should surely hit the spot and keep things on the healthier side of the equation. Have a tasty week!
