Happy Sunday to you. What a couple of surprising games yesterday, and I don’t mean to be Debbie Downer, but my Dodgers are out of the playoffs. I’m not too happy about it, considering the season we had. I think us fans are shocked at their performance in the post season, but I guess life has to go on. We actually had a little rain before, and during the game in San Diego yesterday. Not a big rain, but some moderate drizzle, which does make it great weather for cooking and baking in the kitchen. Is there anything better?
This week is going to be super cozy, so I thought I’d focus on cooler weather foods that are heart-warming. Monday we’re kicking off the week with my Curry Chicken & Chickpea Stew – it’s definitely feels like a big hug with its light warming spices. On Tuesday, I know it’s usually taco night, but I’m sticking with cozy remember, so I’m cooking up my Mexican Roasted Butternut Squash Soup. It has classic Mexican flavors that make it super special and satisfying – give it a try. Hump Day means my Turkey and Wild Mushroom Bolognese for dinner. It’s easy to put together and I like to serve it over steamed spaghetti squash for a bit of fall flavor. Thursday night is all about my Seafood Pot Pies. They’re individually portioned and super tasty on a cooler evening, and you can make it with almost any mix of seafood. TGIF and who feels like cooking, but my Herby Butter Steak & Mushroom Skillet is super simple and tastes so delightful with a big glass of red wine like a Cabernet Sauvignon or Syrah. Saturday’s are for baking and it’s fall and all, so my Pumpkin Cheesecake with Brownie Crust will surely fit into whatever plans you have for the weekend. Enjoy the week ahead and get in the kitchen.
