I’m back from Portugal and Umbria and boy does it feel good to be home. I love to travel, but after a few weeks I’m ready to get back into my routine and see my family and friends. I do miss my kitchen too. I know many of you like dining out regularly, but after a few days of it, I’m done – I want to prepare my own food. I explored, tasted and laughed my way through both countries and more details are coming later about my travels as soon as I can get back to sleeping on my own time zone.
This week is focused on the fall – my favorite season of the year. So, on Monday it’s time for a hardier dish like my Baked Italian Sausage Mostaccioli – cheesy noodles with incredible tomato sauce and bits of sausage throughout. Tuesday we’re headed to Mexico to enjoy my Albondigas Soup – brothy base that’s slightly spicy with meatballs and vegetables – perfect weeknight meal. On Hump Day we’re going with a simple sheet pan dinner – Honey Mustard Roasted Salmon & Brussels Sprouts. Thursday is all about chicken and my Skillet Chicken with Orzo, Leeks and Parmesan is not only easy, but delicious. TGIF and I know we could all use a cocktail – Fall-Tini anyone? Saturday’s are for baking and it’s pumpkin season, so my Pumpkin Pecan Bundt with Chocolate Ganache Drizzle will make you super happy – I know it does me.
