Happy Sunday everyone! I hope you had a good week, and for many — summer has already begun. I think it’s time we start diving into grill season, even though some of you may still have a bit of rain (so jealous). Grilling is something that makes mealtime a bit easier because it doesn’t involve much cooking. However, a good marinade or store-bought sauce does help add flavor to most proteins. So, I highly recommend saucing it up, so to speak. Marinades or sauces don’t have to be complicated, just include things you may already have in your pantry like; soy sauce, sesame or other flavored oil, vinegars of any kind, and dash of some hot sauce or paste. You can always tone down the sharpness with some honey, maple syrup or regular brown sugar — get creative.
This week we’re kicking it off with a Harissa Grilled Chicken recipe that’s both spicy and sweet. Tuesday is taco night in my house and Turkey Tacos Dorados will make the perfect fiesta or weeknight meal. Hump Day is all about beef this week and my Grilled Teriyaki Rib Eye with Ginger Tomatoes is easy delicious food. Thursday we’re going vegetarian and my Grilled Eggplant Salad can stand alone. TGIF and it’s time for a flatbread – grilled that is…with truffle cheese, sweet peppers and salami. Saturday’s are for baking and my Pistachio Bundt Cake with Lemon Glaze is the perfect treat for any occasion. Have a great week and remember…summer’s coming.

Tuesday – Crispy shelled tacos with turkey filling that’s cooked right in the tortilla.
Wednesday – A simple teriyaki sauce turns this rib eye into a powerhouse of flavor. The gingery tomatoes are just a spoonful of heaven on top.
Thursday – Smoky eggplant is grilled to perfection and tossed with cherry tomatoes and basil.
Friday – Crispy charred flatbread with oozy truffle cheese, sweet peppers and zesty salami makes an outstanding meal.
Saturday – Nutty pistachios make the best cakes and a light lemon drizzle brings it all together.
