Happy Sunday. We are now headed into one of my favorite seasons – fall. Fall is a time when (even in Southern California) the temperatures drop slightly, and we can pull out those long sleeve items we haven’t touched in months. For me, fall is the best time of year to bake. I like baking during the next few months even more than during the wintertime because of the flavors of the season. Cinnamon, nutmeg and cloves are warming spices that don’t belong in coffee, but in baked goods like pumpkin bread, pies and cookies, as well as in apple and pear desserts. Don’t get me wrong, I love the winter holidays, but I thoroughly enjoy everything about fall.
This week I thought I would kick it off with a one pot wonder on Monday – One-Skillet Chicken Stroganoff Rotini. This easy meal is super tasty and done within a half hour or so – it’s totally worth the effort. Tuesday is a time for tacos – Slow Cooker Chicken Tacos. This simple chicken taco recipe is made in the slow cooker, so dinner is done when the work day is over. Hump Day is a good evening for toasts for dinner, like my Fall Bruschetta – A creamy chickpea spread topped with sautéed winter squash and radicchio. It’s one of my favorite vegetarian meals. Thursday we’re using our Instant Pot to create Beef Bourguignon. It’s a complex stew made deliciously simple for during the week. Friday night is pasta night – Chorizo and Shrimp Angel Hair to be exact. It’s a great meal to share with friends or family. This Saturday we’re doing brunch and my Apple Cinnamon Scones work beautifully with a hot cup of coffee or tea and maybe a skillet of eggs. Enjoy the week and start baking.
