Fall is definitely in full swing with pumpkins, winter squash and colorful gourds filling baskets and front door steps throughout cities and towns. The bright orange, yellow and reddish tints of the season put an immediate smile on my face and make me think about all the beautiful recipes to make with autumnal ingredients. During this time I also change out some of my summer decor in the kitchen for a few festive fall items like these new kitchen towels from Sur La Table, or perhaps a pumpkin-shaped Dutch oven to prepare a hardy stew or bubbling brothy soup.
I thought we’d start the week with something easy, yet satisfyingly delicious like my Potato Soup with Cheddar and Chives. Tuesday night is usually taco night, but this week it’s my Mexican Meatloaf for a fun twist with familiar flavors. It also makes great sandwiches for school or office lunchtime. Hump day means you’re half way through the week and my quick and easy Rotisserie Chicken Santa Fe Pasta makes a fast and tasty dinner. Thursday we’re headed to southeast Asia with my Slow Cooker Vietnamese Beef Pot Roast and on Friday you can use those beef leftovers to make my Shredded Beef and Mashed Potato Taquitos with Chunky Guacamole. Saturday’s are for baking and this week it’s my Rustic Pear Tart. Freshly sliced pears topped with a simple crumble and baked in a buttery crust – lovely. Have a great week and enjoy the fall colors.
