A Week At A Time – Meal Ideas!

Happy Sunday!  I hope your summer is going swimmingly, and many of you are enjoying the water, sun or outdoor parks as the heat increases.  On my home front — I just received an exercise dress I ordered from Outdoor Voices, that’s comfy enough to play pickleball, or golf, but also looks nice enough to casually entertain in, while serving up cool summer drinks, and salads.  I’ve been spending more time with my granddaughter lately, who’s soon to be two years old, and I ordered a few framed pictures of her at Keepsake frames.  It’s the easiest app on your phone, you just upload a picture and choose which size, color and shape frame you want and in a few days — it arrives.  So, now my home mantles are complete with photos of everyone.

This week is classic summer favorites starting with Monday and my Salmon Salad Stuffed Avocados.  You can use leftover salmon from a previous meal or buy smoked salmon for this recipe.  Taco Tuesday is all about Rotisserie Chicken Tacos made with store-bought chicken — a real time saver.  Hump day we’re baking my savory Cornmeal Crusted Cheesy Tomato and Hatch Chile Rustic Tart.  It’s not difficult to put together on a sheet pan, it’s also gorgeous looking and tasting.  Thursday is a quick skillet meal made with another store-bought ingredient – ravioli.  These Cheese Ravioli with Shrimp in Pink Sauce is fast and flavorful.  TGIF and it’s cocktail time with my Frozen Mango Margaritas.  Now that’s how to beat the heat.  Saturday’s are for baking, even though we baked a bit on Wednesday, but my Peach Spoon Cake doesn’t take much effort, and it’s delightful as can be.  Have a good week and keep cool.

Monday – A creamy avocado stuffed with delicate salmon and other pantry ingredients makes mealtime easy.

Tuesday – Shred rotisserie chicken and combine it with some dry seasoning and you’ve got great filling for tacos.

Wednesday –  Crispy crust surrounds melty cheese, tomatoes and roasted chilies makes this tart super savory.
