Happy Mother’s Day! There are so many women that need to be celebrated today, whether you’re a mom, mentor, or have daily duties that put you in this category. However, my mom is really what I wanted to focus on this morning. Let me tell you something about her. Kathy is an extraordinary women. She raised us kids, mostly by herself, three to be exact, while working as a teacher, school psychologist, vice-principal, principal and superintendent of special education. Yes, she climbed the public education ladder, while still getting us all through college with master’s degrees (my sister has a doctorate), and keeping us all together as one united family. My mom was also an amazing cook and we had a freshly prepared meal on the table at dinnertime every night of my life. Our dinners always included a protein, salad and a couple of vegetables, and they were not from a box or can, but made easily enough using fresh ingredients. Now you know where I got it right? So, this week’s meal ideas are some of my mom’s favorite things that I make, and I hope you will enjoy preparing them too. Let’s celebrate mom!
Monday – She likes fish like I do, or I like fish like she does. This salmon is divine and the herby sauce makes it taste like springtime.

Tuesday – Over the years, she’s gotten into curry. This mix of chicken and chickpeas is easy to prepare and loaded with amazing flavor.

Wednesday – We are truly a salad family and that’s because my mom prepared them nightly. She eats salad everyday, and now we do too.

Thursday – My mom is a bean person too. She loves all beans, but black and Anastazi beans are her favorite. She doesn’t use an instant pot, but this recipe makes them super simple. I’m still working on it.

Friday – My mom loves my sourdough bread and during this past year, I would make and freeze a loaf for her to take home every time she visited me. She likes it toasted in the morning, or she enjoys it with soups, stews and chili.

Saturday – My mom doesn’t love eggs, but still eats them once a week. However, it’s a good meringue cookie that she rather have with her coffee, even though she doesn’t indulge on them too often.

How about a week at a time — low calorie? See Sakara (sp?) for inspiration. Ideally filling and easy to prépare with ingredients that can be found!
