Mother’s Day is tomorrow and it’s time to pull out all the stops for mom. Muffins are an easy and delightful treat to celebrate the occasion and they’re such a good idea to either make ahead and bake-off, just before mom comes over, or make and take to her to share at her house. These little treats are easy to throw together using ingredients in your refrigerator; like fresh or frozen fruit, nuts and seeds, or shredded vegetables; like zucchini or carrots. Most muffin batters are the same, except when going gluten-free, which changes the type of flour used. So, instead of using all-purpose, whole wheat, or other whole-grain flour in the muffin batter, go with an almond flour or pre-mixed gluten-free blend.
I just love a good muffin with coffee or tea and I think mom will feel the same, especially when you surprise her with a freshly baked batch. If you want to really step-up your game, whip up some eggs, or create a layered yogurt & fruit parfait to go along with the muffins, and you have yourself a beautiful meal to celebrate mom.
