A Week At A Time – Meal Ideas!

My post is a few days late, due to technical difficulties (my favorite), but I’m up and running like normal now.  Here’s my weekly post, I’d like you to think of it as a Sunday while reading — we made it through one of the hottest weeks ever on record.  As an individual who was born and raised in Southern California, I’ve never felt it this hot before, and that’s something, considering I spent all of my childhood in Anaheim.  Try Disneyland mid-August and you know what I’m talking about when it comes to heat.  However, I survived the week and spent it mostly indoors, except for gardening in the early mornings before it got really hot and muggy.  I was focused on cooking on the stove top and making Reels for Instagram.  If you ever want to see some of these recipes in action, check out my Reels @genabellrecipes.  I do post many of them there, not all, but most.

I thought we’d start the week with something other than grilling.  There does come a point towards the end of summer when I need to prepare food in another manner and I think I’m there.  So, Monday let’s do some slow cooking in a crock pot and ease into the changing of the seasons.  My Slow-Cooker Caribbean Pork Roast is a game changer and the leftovers make such great meals during the week.  Tuesday is always taco night, but this week we’re going for something slightly different – Cheesy Green Chili Polenta Bake.  It’s creamy, slightly spicy and true comfort food.  Hump Day deserves a little respect and I’m dishing up my Spinach and Ricotta Stuffed Shells in Chicken Sausage Marinara.  Easy to put together and reheats beautifully for lunch.  Thursday is a good night for my Asian Chicken Lettuce Wraps.  Warm shredded chicken wrapped in a crisp green edible cup – nothing better.  Friday night deserves a reward – Maple Bourbon Smash – ahh yes.  Saturday’s are for baking and it’s almost fall, so I thought let’s get warmed up with my Apple Blueberry Crumble Pie.  A flakey crust, luscious fruit and a crumbly topping makes a lovely pie.  Have a tasty week — we survived the heat!!
