It’s been a tough week watching Ukraine being invaded by Russian troops, but even more difficult — watching men, women and children saying “goodbye” to each other, possibly for the last time. I can’t imagine what that feels like, or being a young person with that ingrained in my head for the rest of my life. My heart goes out to Ukraine and all their people and if you can donate, please do. UNICEF is always a good spot to put your money because it helps the children, yet I’m sure there are several more charities that could use a donation.
Even though the crisis in Ukraine is foremost on ours minds, we still have to provide good food for our own families. So this week’s meals will kick off Monday with a simple Turkey and Wild Mushroom Bolognese that’s easy to prepare, yet so so tasty. Tuesday we’re all going to need a good taco, but we are making them for breakfast, instead of dinner and my egg-filled Breakfast Tacos will surely hit the spot. Wednesday is a nice day to whip up a quick bowl of my Instant Pot Tex-Mex Vegan Chili because it’s hardy, yet super healthy and loaded with the flavors of Texas. I’m craving some chicken by Thursday and my Slow-Cooker Ginger Chicken with it’s Asian taste is so nice ladled over a bowl of hot rice….dinners done before you get home. On Friday, we’re using our grills (indoor or outdoor) and making by Marinated, Grilled and Sauced Pork Chops with Garlicky Spinach – one of my favorites. Saturday’s are for baking and these Chocolate Peanut Butter Schmear Cookies are outstanding as a dessert, or snack for the little ones. Happy cooking and baking — please help Ukraine any way you can.
