Garlic Mascarpone Shrimp Toasts – Recipe!

Toasts, hot or cold, are super popular and easy to put together for any meal.  These Garlic Mascarpone Shrimp Toasts are super delicious and easy to make quickly in a skillet and ladle over crispy rustic bread.

I love a good toast for breakfast, lunch or dinner — the perfect anytime meal.  Buttery shrimp are cooked with a clove of garlic and some lemon juice, before the mascarpone cheese is added to the pan.  It’s stirred gently until creamy and incorporated into the sauce.  Fresh herbs and some white cheddar cheese are nicely combined for finishing flavor that’s so darn good when spooned over crunchy bread.

You will love how the sauce soaks into the toast and makes it so tasty to slice into bites with a big juicy shrimp on top.  These would make great food for brunch as well.

Ingredients

2/3 pound raw large shrimp, fresh or defrosted

1 tablespoon butter + more for toasts

1 clove garlic, minced

juice of 1/2 lemon

4 ounces mascarpone cheese, softened

1/3 cup white cheddar cheese

1/3 cup fresh herbs

4 large slices rustic bread

salt and pepper

To Prepare:

  1. In a sauté pan add butter and place over medium heat.  Add shrimp and cook for 2 minutes.  Add garlic, lemon juice, 1/2 teaspoon salt and 1/8 teaspoon pepper, continue to cook for 1 minute.
  2. Place toast in toaster or under broiler and cook until lightly golden brown, remove and butter.
  3. Add mascarpone cheese to shrimp and stir until incorporated.  Add white cheddar and all, but 1 tablespoon herbs, stir.
  4. Continue to cook on low heat for 2 minutes.  Place toasts on plates and ladle shrimp mixture over top.  Top with remaining herbs.  Enjoy!
