A Week At A Time – Meal Ideas!

Happy Super Bowl Sunday!  Well, I can guess what most of us are doing today.  Football food tends to be finger food, things you can pile on a plate, or eat straight from the bowl.  Hot wings are first to come to mind because they tend to be so popular at home gatherings on game day.  I like a good game, yet I love a good commercial.  They always save the best ads for today, but if you don’t catch them all, you can probably view them again tomorrow on any morning talk show or news program.  I also can’t wait for halftime and to see Mary J. Blige perform with Snoop Dogg and Dr. Dre.  These are definitely some favorite artists of mine going back years and years.  It’ll be so fun to see all of them together on the big stage at the game.

The weather has been amazing in Los Angeles this past week with highs in the 80’s.  I went to the beach with my family and soaked up a little sun and fun.  However, it’s going to change on Tuesday and we actually might get some rain.  My garden is so confused — is it still winter?  Speaking of gardens, I planted some new vegetables and flowers yesterday.  Eggplant, kale, spaghetti squash and some daisies to keep the pests at bay.  I hope I wasn’t jumping the gun too soon, but I guess I got so excited about the warm weather I couldn’t resist planting some new seedlings.

Since Monday is still going to be rather hot and Valentine’s Day, I thought I’d kick off the week with a salad.  My Sweetheart Beet Salad with Feta Cream is super cute and tasty too.  Just keeping things romantic as well as light and fun.  Tuesday has rain on the horizon, so we’re going soup.  My Carrot Coconut Soup is easy to prepare and tastes as though springtime is in the air.  We’re doing stew on hump day and this Sweet Potato, Lentil and Andouille Sausage Curry is so full of tasty flavors and easy-peasy to make.  It will surely be a hit at home.  Thursday is a great day for Thai Peanut Noodle Chicken Salad with Eggplant and it’s the perfect warm or cold weather meal because it’s loaded with Asian inspired flavors, and hardy enough to feel satisfied no matter where you are in the country.  TGIF means it’s time for my Mexican Meatloaf, so you can make some tasty sandwiches over the weekend with the leftovers.  Saturday’s are for baking and my Lemon Blueberry Swirl Bread is perfect for breakfast, brunch or served as dessert after a great meal.  Enjoy the week, and happy cooking.

Monday –  Happy Valentine’s Day!  My beet salad is so romantic and couldn’t be a better fresh choice, so you can save room for a chocolate dessert.

Tuesday –  This soup is sweet and creamy and will warm you up and remind you of spring to come.

Wednesday – A bowl of tasty fun is what this stew is all about.  I just enjoy the combination of flavors and especially that Andouille sausage that fits so nicely in a curry.

Thursday – I dig this salad.  It’s tangy and simple to throw together quickly and made with mostly pantry ingredients.

Friday – Who doesn’t love a good meatloaf and this recipe with Mexican flavors is one of my favorites.  It’s the perfect meal for the end of the week.

Saturday – Lemon and blueberries are one of the best combinations, especially baked in this simple loaf bread.  The mildly citrus flavors highlight the sweet berries and it makes the perfect snacking cake.
