Football season is quickly coming to a close with so many fabulous games this weekend. I don’t usually watch much football, but when it comes close to the end, I get excited to see who’s going to make it to the Super Bowl. Finger food is football food and who doesn’t enjoy a good slider, plate of nachos or a dip to plunge a chip right into? Gathering’s across our country are happening and I hope you enjoy some of my favorites to get you to February and the final game.
Monday night it’s Warm Ricotta Corn Dip to enjoy with friends and family — a super creamy dip that’s delicious with tortilla chips or corn chips. Tuesday night we’re stirring up some Tex-Mex Chicken Chili. It’s packed with chunks of meat and beans and the toppings always seem to give it the best finishing touch. Wednesday is burger night and these Pimento Cheeseburgers are a burger with a dip on top to give it that gorgeous tangy treat. Pimento cheese is a southern favorite and it’s loaded with red bell peppers (or pimento peppers), cream cheese, and some mild spices. Thursday evening comes fast and tonight it’s Turkey Meatball Albondigas Soup — my twist on a classic. You might be saying, you don’t use your fingers for soup? But, you can if you want to dunk some tortillas or cornbread inside to soak up that beautiful broth. TGIF and it’s Roast Chicken and Bacon Nachos time. A big plate of these with something cool to drink and it’s a party on a plate. Saturday’s are for baking and I’m thinking it’s almost Valentine’s Day, so it’s Raspberry Rice Krispie Treats to start setting the mood. The kids will love them too!
