Pimento Cheese is a staple in the Southern states of our country and it is eaten as often as guacamole in the West. This whipped cheese spread is a mixture of Cheddar, cream cheese, mayonnaise and pimentos or roasted red peppers. When combined, this dip or spread comes out creamy smooth and it’s delightful served with crackers, in a grilled cheese sandwich, or especially nice on top of a burger.
Memorial Day Weekend is upon us and what better way to commemorate than with a plump and juicy burger topped with a decadent cheese spread like pimento. The burger needs to be at least a third of a pound to appreciate it fully, and a soft buttery bun doesn’t hurt either.
You can either grill these burgers outdoors or on the stove top inside, especially if the weather isn’t great where you happen to be during the weekend. Either way, this Pimento Cheeseburger experience will excite your senses and probably become one of your favorites of the summer season.
Ingredients
2 pounds ground Grassfed beef
salt
6 Brioche or buttery buns
mayonnaise for buns
6-10 lettuce leaves, any variety
Pimento Cheese Spread
1 cup roasted red peppers or Pimentos
4 ounces cream cheese, room temperature
2 heaping tablespoons mayonnaise
2 cups shredded cheddar cheese
1 teaspoon onion powder
1/2 teaspoon salt
pinch of cayenne pepper
(Serves 6)
To Prepare:
- Form 6 burger patties, leaving center slightly indented. Sprinkle each with salt and set aside.
- In a food processor, add all Pimento Cheese ingredients, except half of cheddar cheese. Pulse until mostly smooth. Fold remaining Cheddar in by hand and spoon into a bowl. Refrigerate until ready to use.
- Grill burgers according to your liking. Top bottom buns with a spread of mayo and burger patties. Dollop with Pimento Cheese and lettuce leaves. Top burger with bun lid and serve immediately. Enjoy!
