Batten down the hatches….it’s hurricane season in Southern California. The next few days could bring heavy rain and winds up and down the coastline and then take a turn inland. I hope many have prepared to hunker down and be safe during the storm. What better time to prepare some delightful meals and plan ahead for the upcoming week.
Many kids have started school and on Monday, this Instant Pot Italian-Style Chicken Meatloaf is a delicious dinner and good for sandwiches the next day or two. Tuesday is taco night, but this week we’re making tostadas – Soy Chorizo and Black Bean Tostadas. Soy chorizo is a tasty product and has much less fat than the classic and keeps this dish vegetarian. Wednesday night is Slow-Cooker Soy Sauce Braised Chicken Thighs. Super easy and so delightful served over rice with some steamed broccoli. Thursday is time to use our grill again and make these divine Grilled, Marinated and Sauced Pork Chops with Garlicky Spinach. The marinade becomes the sauce, after reducing it down a bit, and slathering it over the chops after cooking. TGIF and what a week it’s been – so it’s Cherry Martini time – cool and refreshing. Saturday’s are for baking and this Chocolate Chip Cookie Cake with Nutella Buttercream is a fun treat to make for dinner parties or with the kids. Take care and happy cooking.
