Happy Mother’s Day! I hope many of you are able to celebrate your mom, step-mom, aunt, sister, cousin or that special someone that is close to you. Motherhood is a lifetime commitment to a child, or grandchild, and I’m lucky enough to have both in my life. Brunch is often on the agenda and there are some easy options for those of you that didn’t plan ahead. Eggs are a quick fix and can be made in one skillet in the form of a frittata or scrambled and served with fresh herbs over toast or rolled up in a tortilla. I’m sure most mothers would love any meal that someone else created for them in the kitchen.
For the week ahead, we’re kicking it off on Monday with Grilled Thai Plank Peanut Salmon. It’s an easy recipe that’s packed with Asian flavors and pairs nicely with steamed rice and vegetables. Tuesday is taco night and yes, I’m making these Slow-Cooker Carnitas Street Tacos because they are so tasty, and the slow cooker does most of the work. Wednesday is a good night for an Italian Chopped Salad with Oregano Vinaigrette. It’s just like your favorite trattoria would serve — Mama Mia! Thursday night is hummus night and this White Bean Hummus with Smoky Marinated Artichokes is super easy to throw together quickly and is fun to serve with wine or cocktails. TGIF and it’s cocktail time – Cherry Gin & Tonics – yes! Saturday’s are for baking and this Fresh Strawberry Lemon Bundt Cake with Crunch Glaze is one of my favorites. Have a lovely week.
