Nothing says summer like sweet cherries, which have several varietals — some sweet and others tart. But all cherries have one thing in common, they are succulent and delicious. Summer cocktail season has just begun and a Cherry Gin & Tonic, definitely hits the spot on a warm day. A basic gin & tonic is pretty simple, but with sweet and sour cherry juice added in, this cocktail is one you will be sipping on all summer long.
Serve these Cherry Gin & Tonics for an outdoor barbecue or after a long hard week — they are truly satisfying. You can double the batch for groups and large parties too. Happy Summer!
Ingredients
1 cup fresh or frozen, dark cherries – pitted
1/4 cup organic sugar
2/3 cup water
Gin, I like Hendricks
1 bottle tonic water
(Makes about 4 Cocktails)
To Prepare:
1. In a small saucepan, add the cherries, sugar and water. Bring the mixture to a boil and turn off the heat. Let steep in the pan for 30 minutes.
2. Strain the cherries from the juice and reserve both.
3. Place the Hendrick’s, tonic, cherry juice, cherries and glasses on the counter to assemble the cocktails.
4. Fill the glasses with ice and pour 2 ounces of gin into each glass, followed by 1 1/2 ounces of cherry juice. Fill the rest of the glass with tonic water, stir. Top with a cherry and enjoy!
