Easter Sunday is right around the corner and what better way to celebrate the day than with a festive family brunch. Brunch foods are always casual in nature, things you can serve right out of the skillet, casserole dish, or pan. Eggs are usually a requirement whether they’re deviled, scrambled or over-easy because they tend to be a favorite brunchtime food.
Eggs are also economical as well as versatile, and can be transformed into some of the most appetizing meals with just a handful of ingredients. I enjoy eggs in a hash, or skillet cooked with potatoes and vegetables because they become so entrenched in all the yummy flavors of the dish. However, I do love eggs in a strata combined with bread, cheese and eggs and baked until warm and crispy on top. It’s like a savory bread pudding with all my favorite flavors. There are so many delightful ways to prepare eggs for Easter, and here’s my list of favorites to make your day even more special.
