“Here comes Santa Claus, here comes Santa Claus right down Santa Claus Lane” – yes I am already singing Christmas Caroles and getting ready to go buy my holiday tree. The lights are already up on the house, thanks to my husband, and now it’s time to start making the holiday treats. First up for the season are these No-Bake Nutella Holiday Haystack Cookies.
I thought we would kick off the month with an easy no-bake recipe to inspire most of you to put together your own sweet treats this season. Nutella, a mixture of chocolate and hazelnuts, is the perfect creamy spread to fold into these chocolaty rich cookies. Haystacks are a mix between a candy and a cookie, there isn’t any flour in the recipe, but they come together like a cookie because of the coconut and hazelnuts.
You often see haystacks in white chocolate or combined in a peanut butter spread, along with pretzels, candies and cereal. However, I thought we would go with chocolate and nuts for this cookie recipe – it feels a little more seasonal and tastes delightfully so.
These cookies can be made in a matter of minutes and all you need is a saucepan, cookie sheet and a spoon. The ingredients can all be found at your local grocery store, including the green & red sprinkles for a little Christmas flair.
2 ounces unsweetened chocolate
1/2 cup Nutella
3 tablespoons coconut oil
1/4 cup cocoa powder, I prefer Valrhona
1/2 cup confectioners sugar
1 cup hazelnuts
1 cup sweetened coconut
green & red sugar sprinkles, optional
(Makes 1 1/2 Dozen)
1. Chop chocolate and place in a large saucepan. Add Nutella and coconut oil and place over medium heat. Whisk until melted and smooth, about 2 minutes. Turn off heat.
2. Add cocoa powder and confectioners sugar, whisk until smooth. Rough chop hazelnuts and add to chocolate mixture. Add coconut and fold into chocolate, until combined.
3. Spoon 1 heaping tablespoon onto a parchment lined cookie sheet, repeat. Sprinkle with holiday sugar and place in the freezer for 10 minutes to set up. Serve immediately or store in an airtight container in the refrigerator. Enjoy!
