Instant Pot Smoky Southern Greens & Beans – Recipe!

Instant Pot is going to be the gift of this holiday season.  The electric pressure cooker is so simple to use and you can create almost any dish in no time at all. I purchased my Instant Pot almost a year ago and I have created several dishes from pork to grains and they all turned out beautifully.  Today, I thought I would add a little southern flair to my Instant Pot repertoire and create a simple smoky recipe that really warms your soul.

Stewed southern greens are usually prepared on the stove top in a large pot or Dutch oven, and the Instant Pot would also be the perfect cooking vessel to create this meal because of its steamy environment.  In this recipe for Smoky Southern Greens & Beans, I added some dried white beans to the mix for an added creamy texture and to give it a more balanced taste.

A ham hock or leftover ham bone is the smoky feature in this show, it adds a nice touch of meatiness without it overpowering the greens.  You can find a shank in most local grocery stores, just make sure it is smoked to create the lovely flavors, which enhance this brothy bowl of goodness.

Ingredients

1 ham hock or leftover ham bone

1 red onion, diced

1 clove garlic, minced

2 cups chicken broth

2 cups beef broth

1/2 cup dried white beans, soaked overnight or just dry

6 cups greens, chopped – mustard, collards or spinach

olive oil

salt and pepper

(Serves 4-6)

To Prepare:

1. Add 1 tablespoon olive oil to Instant Pot and press saute.  Add onion and garlic and cook for 3 minutes.  Press Cancel on pot and add broths to deglaze, stir.

2.  Add ham bone and dried beans.  Place all the greens on top of ham bone and place lid on Instant Pot.  Place nozzle into Sealing position and lock lid.  Press Manuel and adjust time to 50 minutes for unsoaked beans and 40 minutes for soaked beans.  Do not use canned beans, they will turn to mush.

3.  When pot beeps, either allow it to depressurize on its own for 10 minutes, or using a towel place the nozzle to Venting.  After a minute, unlock lid and add 1 teaspoon salt and 1/4 teaspoon black pepper.  Ladle the Smoky Southern Greens & Beans into bowls, Enjoy!
