Happy St. Patrick’s Day. I think I’m a little Irish, at least Scotch-Irish, as I have been told, but it really doesn’t matter, I love to celebrate this day. In the past, I would often head out with my husband, and join some friends for a beer or an Irish coffee, but this year is different, once again, and we’re staying home, and putting together our own bit of fun. Cooked corned beef and cabbage is always on the menu, but what I enjoy even more is the leftovers. It’s so fun to play with the ingredients, and create some fantastic new dishes for the next day or two. So, I recommend buying a larger corned beef than you usually would, so you have sufficient material to work with. Here’s my list of favorites that I enjoy making, some are more traditional recipes, while others are slightly off the grid. However, they all have one thing in common, they’re delicious.
