Meaty Italian Grilled Cheese – Recipe!

Nothing is going to waste in my household, including leftover meat sauce from pasta night.  Meat Sauce is one of those things that can be made in minutes, especially now using an Instant Pot, and it can last days in the refrigerator to enjoy over pasta, vegetables, or spoon inside a bun.  But, have you ever made a grilled cheese sandwich with leftover meat sauce?  Today’s the day.

Ooey-gooey doesn’t even begin to describe this grilled cheese.  After the meat sauce, good sliced cheddar cheese is what brings this Sando together.  Another little trick is to spread some mayonnaise on the inside of the bread before you start layering cheese and sauce, to give the sandwich another level of creamy goodness.  I know, this sounds quite decadent, well it is – it’s definitely Not diet food and for good reason.

After a quick griddle in the pan to allow the sauce to warm up and the cheese to melt, you have yourself a pretty tasty sandwich.  Be careful when slicing, you don’t want to lose any of that amazing filling from inside.  This recipe is definitely worth the splurge.

Ingredients

1 cup meat sauce, leftover from another meal

3 slices cheddar cheese

4 slices of bread

4 teaspoons of mayonnaise

butter, for bread and pan

(Makes 2 Sandwiches)

To Prepare:

  1. Lay bread on cutting board and spread with mayonnaise.  Layer cheese to fit on one side of bread.  Top with half of sauce on each cheese side.  Place other slice of bread on top, mayonnaise side down.
  2. Butter outside of bread and place 2 teaspoons butter in skillet over medium heat.  Place both sandwiches in pan and cover with lid.  Cook for 2-3 minutes a side, until cheese melts and sandwich is deep golden brown.
  3. Remove from pan and gently slice in half diagonally.  Enjoy!
