Cinco de Mayo is this weekend and it’s mostly about fun with food and drink. It gives all of us an excuse to indulge on Mexican favorites, especially tacos. Whether it’s Cinco de Mayo or not, a delicious taco is always a good idea. I can’t imagine my life without tacos because to me they are the best comfort food on planet earth, right up there with ice cream. There’s something magnificent about eating a taco. Maybe it’s the savory filling, and in my case, it’s usually salmon or carnitas, but I think it’s much more. It’s the layering of condiments like; shredded cabbage that’s usually dressed in lime juice or crema, the spicy salsa that’s dotted throughout each bite, and the sliced avocado for a cool and creamy finish on my tongue.
So for this Cinco de Mayo, I compiled a list of my favorite taco recipes that I think you will surely enjoy and inspire you to celebrate this day. Even if you’re headed out this holiday to a bar, you still need a little sustenance when you return, so there are a few recipes that you can make in the slow-cooker, that will be ready to dish up and fill your favorite tortilla when you get home.
