Happy Cinco de Mayo! I love this day because it’s mostly about fun, and it gives all of us an excuse to indulge on Mexican favorites, like tacos. Whether it’s Cinco de Mayo or not, I love tacos. In fact, I eat tacos every week no matter if I make them myself, or buy them from a taco truck. I can’t imagine my life without tacos because to me they are the best comfort food on planet earth, right up there with ice cream. There’s something magnificent about eating a taco. Maybe it’s the savory filling, and in my case, it’s usually salmon or carnitas, but I think it’s much more. It’s the layering of condiments like; shredded cabbage that’s usually dressed in something, the spicy salsa that’s dotted throughout each bite, and the sliced avocado for a cool and creamy finish on my tongue. It’s all of those things combined, and it’s called a taco.
So for this Cinco de Mayo, I compiled a list of my favorite taco recipes that I think you will surely enjoy and inspire you to celebrate this day. Even if you’re headed out this holiday to a bar, you still need a little sustenance when you return, so there are a few recipes that you can make in the slow-cooker, that will be ready to dish up and fill in your favorite tortilla when you get home.
