Cinco de Mayo is in 10 days and I am already planning my festive Mexican menu. Cinco de Mayo is when Mexico claimed victory over the French, during the Battle of Puebla in the 1800’s – a relatively minor holiday in Mexico. But here in America, Cinco de Mayo is a celebration of tacos, guacamole and of course margaritas.
I think tacos are one of my favorite foods. Who doesn’t love a soft corn tortilla stuffed with seasoned shredded meat, a splash of salsa and some crunchy cabbage? Tacos are hard to beat and with them usually comes a salted rim margarita to wash it all down. Tacos can be filled with anything from beef, pork, chicken, fish to vegetables and even tofu. Yes, I do believe I have a tofu taco recipe here on my blog – hah!
